Seafood Risotto

My non-gluten lunch today was a bowl of Cheerios, with about 1/2 cup of almond slivers and about 1/2 cup of raisins. I loved it, though the pups kept expecting me to toss them a few cheerios.

So by around 4pm I was starving.. and looking for something exciting (and filling) for dinner. My seafood risotto came out great!

Ingredients

Put the carrots, ponzu, 1/2 the onion, saffron, dried tomato slices and parsley in a 3 or 4 qt. pan, add the water and bring to almost a boil. Add the salmon steaks and reduce the heat to simmer. Simmer for 5 minutes and then add the Shrimp. Simmer for 5 minutes more. Remove the salmon and shrimp and let both cool so you can flake the salmon, remove any bones and remove the shrimp tails. Remove the carrots from the broth, and slice thin. Keep the broth hot.

Heat the butter and olive oil in a large fry pan. Add the red pepper flakes, and remaining onion, and when the onion is soft add the arborio rice. Stir cooking for two minutes. Add the wine or chicken broth and let it absorb while you stir slowly and constantly. Strain the broth from the seafood, adding it to the arborio one cup at time.

I scooped a cup broth from the stock pot, and poured it through my chinese strainer right into the rice pan.

When the rice is about half done, add the flaked fish, shrimp and carrot pieces, then continue adding the rest of the broth, stirring gently until all the broth is used, or the rice is done (it should be creamy and still al dente). Add 1 tablespoon lemon juice, and add a tablespoon of butter if you like. Taste for salt/pepper and give a grind of each and serve.
